The recipe: radish leaf pesto
For this recipe, you will need:
- 1 handful of radish tops
- 10 cl of olive oil
- 80 g of parmesan
- A few cloves of garlic
- Clean the radish tops and pat them dry on paper towels.
- (Optional) Fry the garlic cloves if you can't stand raw garlic
- In a mortar (and not a blender to let the aromas express themselves without heating the preparation), crush the radish tops and the garlic, while adding the olive oil to coat the preparation and the parmesan to give more consistency
Serve with pasta or grilled vegetables. The preparation can also flavor fish or grilled meat.
